In 2015, Sylvestre Polanco opened its doors in the old Casa Calderón, located at Anatole France 74; street with the name of the author of “The crime of Sylvestre Bonnard”, a novel that would serve as inspiration to name a restaurant with Argentine cuts whose synergy with traditional Mexican food is achieved in a unique and special way. Polanco saw us born, Santa Fe gave us a warm welcome and little by little we are adding new branches of Sylvestre Asador near you.

En el año 2015, Sylvestre Polanco abrió sus puertas en la antigua Casa Calderón, ubicada en Anatole France 74; calle con el nombre del autor de “El crimen de Sylvestre Bonnard”, novela que nos serviría de inspiración para ponerle nombre a un restaurante de cortes argentinos cuya sinergia con la comida mexicana tradicional, se logra de manera única y especial. Polanco nos vio nacer, Santa Fe nos dio una cálida bienvenida y poco a poco vamos sumando nuevas sucursales de Sylvestre Asador cerca de ti.

Gaspar es un proyecto que nació entre amigos por el amor a la cocina , y a la buena mesa, hace 11 años con la intención de disfrutar de comida deliciosa, buena música y un ambiente inigualable. Nos gusta la idea del buen vivir alrededor de la cocina, y es por eso que creamos un espacio dedicado a esta sencilla idea.

Nuestra hamburguesería restaurante fue la primera en su estilo en la ciudad de Guadalajara y nos atrevemos a decir que en México, y sigue siendo el bistró favorito de muchos los tapatíos y de aquellos que vistan la ciudad.

La especialidad de Gaspar son las hamburguesas, sin embargo, hemos desarrollado platillos emblemáticos que están elaborados a partir de recetas clásicas y hogareñas, con productos de mar y tierra en su mayoría locales, que nos ayudan a crear una atmósfera única en torno a la experiencia Gaspar y colaborar en comunidad.

We make Mexican cuisine from ideas, memories, concepts, seasons and products. We have a menu that is always rotating because creativity occupies an important place in our philosophy.
